To turbocharge your noodles, prepare these delicious, healthy, and light Vegan Spinach Meatballs.

Ingredients

  • Olive oil for sauteing
  • 1 onion, chopped
  • 2 chopped garlic cloves
  • 1 grated carrot
  • 2 cups cooked lentils
  • 1 ½ cups of breadcrumbs
  • 1 egg
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup parsley
  • 1 cup of barbecue sauce

Instructions

  1. Saute the onion, garlic, and carrot in olive oil. Set aside.
  2. In a food processor, place the lentils, the sauteed ingredients, the breadcrumbs, the egg, the salt, the black pepper, and the parsley.
  3. Grind everything until it becomes a dough.
  4. Shape into small balls and place on a greased baking sheet.
  5. Bake in a 200 degree oven for 10 minutes.
  6. In a frying pan put the barbecue sauce and heat it up.
  7. Add the meatballs and serve.
