Tomato and roasted peppers bruschetta is the perfect accompaniment for any occasion, as well as being an excellent appetizer that most guests love. This Tomato and roasted peppers bruschetta recipe will prove it to you!

Ingredients

  • 6 slices of Italian bread
  • 1 clove of garlic cut in half
  • parmesan for sprinkling
  • 2 ripe Italian tomatoes
  • 2 peeled garlic cloves cut in half
  • 1 sprig of basil
  • extra virgin olive oil
  • salt
  • 1 small yellow bell pepper
  • 1 small red bell bell pepper
  • 1 sprig of basil
  • 2 cloves of garlic, peeled and crushed
  • extra virgin olive oil
  • salt and black pepper to taste

Instructions

  1. Make a cut in each tomato and soak them for 30 seconds in boiling water.
  2. Remove from the water, place in cold water and remove the skin and seeds and dice.
  3. Place the tomatoes in a colander and sprinkle with a little salt.
  4. Let it stand for 30 minutes.
  5. The tomatoes will lose a little liquid and the flavor will become more pronounced.
  6. Season the tomatoes with the olive oil, garlic (remove before serving) and basil.
  7. Set aside until ready to use.
  8. Cut the bell peppers in half and remove the seeds.
  9. Place in a baking pan and bake at high temperature (240°) until bubbles begin to form.
  10. Remove the peppers from the oven and place in a plastic bag or glass container and cover with plastic wrap.
  11. Let them cool.
  12. Then remove the skin from the peppers.
  13. Cut them into thin slices, season with olive oil, garlic (remove before serving), salt, pepper and basil.
  14. Set aside until serving time.
  15. You can leave it ready days in advance.
  16. Rub the garlic clove over all the slices of bread.
  17. Bake at 200°C for 5 minutes.
  18. Remove from oven, place the fillings (don’t forget to remove the garlic) and sprinkle the cheese.
  19. Return to the oven for another 5 minutes and serve.
