  • 1 pound wheat flour
  • 1 1/2 cup water
  • potatoes to go with it
  • 1 big onion
  • 3 garlic cloves
  • shoyu to taste
  • 1/2 cup tomato sauce
  • Salt to taste

  1. Mix the water with the flour until the dough is homogeneous.
  2. Make a ball out of the dough and let it soak for about eight hours in a bowl of water.
  3. After that, wash the dough under running water.
  4. To make it easier, use a colander.
  5. Stir the pasta while the water runs down as if you were washing it.
  6. As the starch in the flour comes out, the dough becomes elastic, that is the seitan.
  7. The ideal point is when the washing water comes out clear.
  8. Let it dry and shape it as you like.
  9. Cook it in a pressure cooker with water, shoyu, onion, garlic and tomato sauce for about 20 minutes after the pot starts beeping.
  10. Once cooked, store it in the refrigerator along with the sauce in which it was cooked until it is time to use it.
  11. Make holes in the seitan so that the sauce is better absorbed.
  12. When you eat it, place it on a baking sheet (along with the sauce), garnish it with boiled potatoes, and bake it in the oven until golden brown
