Roasted Christmas Turkey is the one dish that always takes center stage at the dinner table. Therefore, besides being delicious it should also look very appetizing!

Ingredients

Turkey

  • 1 turkey piece
  • 2 cups white wine
  • 4 cloves of garlic, minced
  • 1 small grated onion
  • 2 tablespoons of lemon juice
  • 3 tablespoons chopped green parsley
  • Black pepper and salt to taste
  • 1 tablespoon olive oil
  • 1 cup melted butter

Roasted Christmas Turkey Stuffing

  • 100g diced bacon
  • 1 unit smoked calabrian sausage
  • 300g ground beef
  • 100g manioc flour or farofa
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup chopped green olives
  • 1 tablespoon chopped green parsley
  • Black pepper and salt to taste
  • Olive oil for drizzling

Instructions

  1. Fry the bacon, add the sausage and the ground beef.
  2. Add the onion and garlic and mix well.
  3. Add the olives, the flour and the other seasonings.
  4. Finally add the parsley and set aside.
  5. Before you begin defrost the turkey according to package directions.
  6. Then remove the giblets that are inside the turkey.
  7. Transfer the turkey to a large platter and delicately lift the skin of the turkey breast, pushing with your hand and pour the melted butter (this process will make the turkey meat juicy), lower the skin again follow the recipe.
  8. Coat the inside of the turkey with olive oil and add the reserved stuffing, pressing lightly.
  9. Close this area with toothpicks so that the stuffing does not leak, or if you prefer, sew.
  10. To season the Christmas turkey, baste its entire surface with wine.
  11. Crush the rest of the ingredients in a pestle and rub them over the entire surface of the turkey to get a good taste.
  12. With the help of a toothpick, attach the wings to the breast and tie the two little legs with a thread, so that they are well aligned when serving.
  13. Then cover the turkey with aluminum foil and bake in a preheated oven at 220° for about 1 hour and 40 minutes, or until the turkey thermometer jumps.
  14. Halfway through, drizzle the broth over the platter.
  15. Then remove the foil and drizzle the broth, and return to the oven at 240° for another 20 minutes to brown.
  16. Finally remove the thread from the turkey.
  17. Place the turkey on a platter and before serving decorate with farofa or fruit.
