Christmas Quinoa Tabbouleh

A simple and delicious side dish for your Christmas dinner is Quinoa Tabbouleh! Although it is quite different from typical Christmas dishes, we know that it will fit very well on your table.


  • 1/2 cup
  • 1 medium Japanese cucumber cut into cubes
  • 6 ounces cherry tomatoes cut in half
  • 1 medium onion cut into cubes
  • a pinch of Syrian pepper
  • 3 tbsp chopped mint
  • salt to taste
  • 1 tsp lemon juice
  • ½ cup chopped dried apricots
  • ¼ cup pignoli
  • ¼ cup olive oil


  1. Place the quinoa in a fine-mesh sieve and rinse the grains well under running water.
  2. Transfer to a pot with enough water to cover the small grains.
  3. Cook for 15 minutes or until soft but firm.
  4. Drain well and transfer to a bowl.
  5. Then add the remaining ingredients and drizzle with olive oil, mixing gently.
  6. Serve garnished with mint sprigs.
