Loin with red fruit sauce is a balanced option for a meal for two, with lots of flavor and a simple preparation.

Ingredients

  • 1 kg of beef tenderloin
  • 120 grams of raspberries or blackberries
  • 180 grams of strawberries
  • 2 cups orange juice
  • 1 cup of balsamic vinegar
  • 40 grams of sugar (¼ cup)
  • 1 coffee spoon of cornstarch
  • 1 pinch of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 tablespoon of butter
  • 2 tablespoons sunflower oil

Instructions

  1. Heat a frying pan over medium heat with the butter, the washed and sliced fruit and the sugar.
  2. Sauté until the fruits wilt.
  3. Tip: If you want, you can add other red fruits to this recipe.
  4. After the previous step add the orange juice, the balsamic vinegar, salt, pepper and garlic paste to taste.
  5. Separately dissolve the cornstarch in a little water and add to this preparation.
  6. Mix it and let it cook until thickened.
  7. While the sauce is cooking, cut the tenderloin into more or less thick slices, and season with salt and pepper.
  8. Tip: You can also add an aromatic herb to your liking.
  9. Brown the loin slices, on one side and the other, in a skillet over medium heat with the oil.
  10. Finish cooking in the pan or, if you prefer, bake in a preheated oven at 180°C for 15-20 minutes, depending on whether you like your meat well or rare.
  11. Back to the sauce, ideally it should be thickened.
  12. When it does, turn off the heat and, if you like, beat it in a blender or with a hand mixer.
  13. When the meat and sauce are ready, this recipe for sirloin in berry sauce is ready to serve!
