Ice Cream Cake with Sponge Cake

Sponge cake

  • 2 cups sugar
  • 4 eggs
  • 2 tablespoons unsalted margarine
  • 1 cup warm milk
  • 200 g potato starch
  • 1 1/2 cups of flour
  • 1 Tbsp baking powder


  • 1 pot of strawberry ice cream
  • Strawberries (to decorate and mix with the ice cream)
  • Whipping cream


  1. Beat the egg whites until stiff and set aside.
  2. Beat the egg yolks with the sugar and margarine until you obtain a whitish cream.
  3. Sift together the flour, baking powder, and potato starch.
  4. Gradually add to the whipping cream, alternating with the warm milk.
  5. Finally, gently add the beaten egg whites.
  6. Bake in moderate oven until golden brown.
  7. Cut the cake in half and trim the sides.
  8. Spread the ice cream and pieces of strawberries over the dough.
  9. Cover with the other half of dough.
  10. Spread the whipping cream over the whole cake and, with the help of a piping bag, decorate it.
  11. Place some strawberries on top to enhance the look.
  12. Put it in the coldest part of the refrigerator.
