Filled Chocolate Panettone Recipe

For the dough

  • 3 cups of flour (420 grams)
  • 1 cup warm water
  • 10 tablespoons sugar
  • 4 tablespoons powdered milk
  • 3 tablespoons butter or margarine
  • 1 beaten egg
  • 1 tablespoon dry baking powder
  • 2 teaspoons of panettone or vanilla essence
  • 1 teaspoon fine salt
  • 100 grams of chocolate drops or candied fruit

For the filling

  • 250 grams of chopped milk chocolate
  • 250 grams of white chocolate, chopped
  • 1 box heavy cream (without serum)

For the topping

  • 100 grams of chopped dark chocolate
  • Chocolate confectionery


  1. Put in a bowl the flour, milk powder, butter, egg, essence and salt.
  2. Dissolve the yeast and sugar in the warm water and leave until the yeast is active.
  3. Add the yeast, water and sugar mixture to the bowl with the other ingredients and mix everything together by hand or with a planetary mixer until you get a dough that looks like bread dough, but softer.
  4. Cover the dough with a cloth and let it rise for 1 hour in a warm place.
  5. Then add the chocolate drops or candied fruit, shape the dough into a ball and place it in the panettone molds.
  6. Leave it for another 30 minutes.
  7. Preheat the oven to 180ºC and bake the homemade panettone for 40 minutes or until golden brown.
  8. Remove and allow to cool completely before proceeding to the next step.
  9. Prepare the panettone filling by melting the milk chocolate and white chocolate in separate bowls in the microwave.
  10. Leave it for 30 seconds at maximum power and remove to stir.
  11. If the chocolate is still not completely melted, microwave for another 30 minutes.
  12. Divide the cream into two halves and mix one part with the milk chocolate and the other with the white chocolate.
  13. Stir well until completely incorporated and the chocolate ganache for Panettone is ready!
  14. Take the cooled panettone and cut a small plug in the top.
  15. Remove the core of the panettone and in its place put the chocolate ganache, or pieces of the core as well.
  16. Cover with the Panettone lid.
  17. Finally, melt the dark chocolate in the microwave, the same way you melted the filling chocolates, and pour it over the panettone.
  18. Decorate with chocolate confetti and put it aside in the refrigerator.
  19. When the chocolate coating is hard, your homemade truffle panettone is ready to serve!
