The Eggplant Stuffed with Tofu is a delicious and inexpensive vegan option that will win you over with its combination of intense and unusual flavors.

Ingredients

  • 2 small eggplants
  • 150 grs chopped dried tofu
  • 1 medium tomato
  • 2 cloves of garlic, chopped
  • 4 Tbsp shoyu sauce
  • 1 tbsp (tablespoon) of salt
  • 1 tbsp (tablespoon) of sake
  • 1 pinch of hot paprika
  • Spring onion to taste
  • 1 Tbsp extra virgin olive oil

Instructions

  1. Mix the minced garlic with the soy sauce, salt, sake and other seasonings; pour over the chopped tofu, mix and let stand for at least 30 minutes.
  2. Cut the eggplants in half and scoop out most of the pulp with a spoon.
  3. Rub a little salt and olive oil into the eggplants and place them in a small baking pan.
  4. Crumble the tofu with your hands, add the chopped tomatoes and the eggplant pulp, mixing well.
  5. Place over the eggplants, squeezing the filling so it fits well.
  6. Drizzle with olive oil and bake for about 25 minutes.
