A very fun recipe to make with the family are Christmas Gingerbread Cookies! Make them and get the kids in the house to help decorate and get creative!

Ingredients

Cookies

  • 1/2 cup butter
  • 1 cup brown sugar
  • 4 tbsp honey
  • 2 cups white powder
  • 2 tsp ginger powder
  • 1 tsp bicarbonate powder
  • 1 egg

Glaze

  • 1 egg white
  • 1/2 cup icing sugar
  • food coloring of your preference

Instructions

  1. In a saucepan, add the butter, brown sugar, and honey and bring to a low heat.
  2. Stir with a spoon until a syrup is obtained.
  3. In a bowl, sift together the flour, ginger, and bicarbonate.
  4. Mix well with a spoon and add the melted syrup and the beaten egg.
  5. Stir until it becomes a uniform dough.
  6. Wrap the dough in cling film.
  7. Don’t worry about the consistency, because at first the dough is very soft.
  8. Refrigerate for at least 12 hours.
  9. Preheat the oven to 180ºC (medium temperature).
  10. On a floured surface, roll out the dough until it is 0.5 cm thick.
  11. Cut the dough with different shaped cutters.
  12. If you prefer, use the mouth of a glass to make round cookies.
  13. Grease two or more large baking dishes with butter and sprinkle with flour.
  14. Distribute the cookies on the baking trays, leaving a 2 cm margin between them.
  15. Place in preheated oven and bake for 10 minutes.
  16. Remove from oven and let cool.
  17. When the cookies are firm, remove them with the help of a spatula.
  18. If you wish, decorate the cookies with glaze.
  19. Store in a closed container, in a dry and well-ventilated place.
  20. In a bowl, lightly beat the egg white with a fork until foamy.
  21. Add the sugar little by little, stirring constantly, until you obtain a cream that does not drip.
  22. Reserve a little of the white glaze and tint the rest in the desired colors.
  23. Garnish the cookies with the help of a toothpick or a piping bag.
