An essential side dish to keep the freshness in the meals and balance the fats are the salads, which can be very delicious if well made.

  • 1 boneless chicken breast
  • 1 piece of romaine lettuce
  • 2 units lemon
  • 2 units of egg
  • 150 grams of Parmesan cheese
  • 4 teaspoons white vinegar
  • 1 teaspoon of mustard
  • 1 pinch of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 2 teaspoons of olive oil
  • 4 slices of bread
  • 100 grams of butter

  • Cut chicken breast into cubes and add some onion powder and oregano or thyme.
  • Cut the lettuce into medium-sized pieces by hand (it is important not to cut it with a knife because it will oxidize).
  • Then take the lettuce to a bowl and cover it with plenty of water, add some vinegar or lemon juice, and let it soak for 10 minutes.
  • Remove from the bowl and let the lettuce drain.
  • In a frying pan, add the butter and let it melt.
  • Separately, put the eggs in a deep pan, cover with water and bring the pan to medium heat for 10 minutes, or until the eggs are cooked.
  • Remove the eggs and, once cool, peel.
  • Add the diced breadcrumbs and add a pinch of salt, pepper and some garlic paste.
  • Once the fried bread takes on a golden color, remove and set aside on a plate.
  • Bring a frying pan to medium heat and add one of the teaspoons of olive oil.
  • When the pan is hot, add the chicken seasoned with salt and black pepper to taste.
  • Saute for a few minutes.
  • Add the lettuce on the bottom, fried bread on top of it, and the grated egg.
  • When the chicken is well sautéed, remove it from the heat and let it cool.
  • Add the chicken (already cold) into the bowl where you have already placed the rest of the ingredient mixture.
  • Add the parmesan over the salad and mix all the ingredients well.
  • In a separate bowl prepare the dressing: add the vinegar, oil, lemon and mustard.
  • Mix everything well and it is ready to serve.
