This foreign recipe of Beet Falafel is a super nutritious vegan option for any time of the day!

Ingredients

  • 1 medium roasted, peeled beet
  • 250g cooked chickpeas
  • ½ clove of garlic
  • ¼ teaspoon cumin powder
  • Salt
  • 170g plain yogurt
  • 1 tablespoon tahine
  • ½ lemon
  • Black pepper

Instructions

  1. In a food processor, place the beets, chickpeas, garlic, cumin, and salt.
  2. Grind until it becomes a smooth paste.
  3. Shape the falafels and place in a non-stick baking pan.
  4. Bake in a preheated oven at 180 degrees for about 30 minutes or until golden brown.
  5. In a bowl, mix the yogurt, the tahine, the juice of ½ lemon and season with salt and black pepper.
